Those of you who know me personally know that I owned a restaurant and was a chef for years. My passion for real estate is rivaled only by my passion for food. We all know that the first room in a home that people look at is the kitchen– I know I do!
I wanted to share a couple of my favorite fall recipes that you can use in your home. Please note that these measurements are approximations. I cook by taste and recommend that you taste as you add ingredients to slowly build flavors. You may want more or less spice– you won’t know if you follow my lead!
This creamy, decadent Butternut Squash and Apple Soup was one of our best sellers and one of my favorite fall dishes. It’s great with fresh bread and light salad. To save some time you can use frozen butternut squash. It does save prep and cook time.
BUTTERNUT SQUASH AND APPLE SOUP
1 butternut squash, peeled and chopped
2 apples, peeled, cored, and chopped
1 medium onion, diced
3 cloves garlic, minced
3 c. vegetable stock
1 1/2 – 2 heavy cream (you can subsitute coconut milk for a vegan version)
3 tbsp. curry powder
2 tbsp. maple syrup (optional)
salt and pepper to taste
1.) Saute onion until clear and soft. Add garlic and saute for 1-2 minutes.
2.) Add stock, squash, apple, curry, syrup, and salt and pepper. You may need to add more stock to cover your vegetables. Cook for 30-45 minutes until vegetables are soft and fork tender.
3.) Puree with immersion blender (my preferred method), food processor, or blender. Return to pot.
4.) Slowly mix in cream and serve.
These super flavorful chicken thighs are so easy! You throw them in a CrockPot and leave! They can be shredded for sandwiches or burritos, but I like them served with rice and sauteed spinach.
HONEY GLAZED CHICKEN THIGHS
1 package boneless skinless chicken, seasoned with salt, pepper, and paprika
1/4 c. honey
1/4 c. soy sauce
1/4 c. ketchup
3 cloves garlic, minced
2 tbsp. Italian Seasoning
1.) Whisk all ingredients but chicken.
2.) Put chicken in CrockPot, cover with sauce, and cook on low for 6 hours. That’s it. So EASY!
